Un-authentic Jerk Chicken
Day 1, Week 1

Jerk Chicken is a traditional Jamaican dish… now I have to say that although the first 18 years of my life was spent living in in the Caribbean, I only heard about Jerk after I moved to Canada!!
Oh, also, I have never eaten authentic Jerk Chicken. ![]()
Main Ingredients:
1 whole chicken, cut into small pieces
Gouda Jerk Spice
Trinidadian Curry Powder
Guidelines (quick, easy, but still tasty!):
Pre-heat pot on stovetop, add a little oil, and then put in the washed chicken parts
Cover the chicken in a generous sprinkling of Jerk seasonings, and then evenly sprinkle about 1tbsp of curry powder
Add a drizzle of olive oil on the top and mix it all up for about 3-5 mins on high heat while the chicken gets brown
Add salt and pepper to taste
Once the chicken is evenly covered with the spices and the liquid from the pot is almost gone, add about 4oz (I use a sippy cup to measure) of water and let it cook for about 20 mins on medium heat
Add about 4oz of water again, mix well, let cook for about 20-30 mins more until chicken is ready
Grown-up version was served with rice, beans and salad, kiddy version was served with rice and an avocado-veggie medley.
