Cozy Lamb and Couscous
Day 3, Week 5

Since it was sooo cold and snowy yesterday (read: depressing-ish), I decided to cook some comfort food.
Ingredients:
lamb pieces
hoisin sauce
bbq sauce
soy sauce
sesame oil
Montr�al steak spice
onions
garlic
red bell peppers
mushrooms
sweet onions
couscous
Guidelines:
Roasted Veggies & Couscous –
Cut red peppers, mushrooms and the sweet onions into chunky pieces
Put all into a roasting pan and drizzle olive oil over
Bake at 350 degrees Fahrenheit until the veggies are to your desired tenderness and colour
Once it is finished, cut up the veggies into bite sized pieces and put them into a medium saucepan, add couscous and enough water to completely cook the couscous (direction on the packaging)
Once the couscous is cooked, it’s done!
Lamb – (inspired by this)
Put lamb pieces into a glass baking dish
In a bowl, mix chopped onions, crushed garlic, hoisin sauce, soy sauce, a few drops of sesame oil, and the bbq sauce
Season the lamb with the Montr�al steak spice, salt and pepper to taste, drizzle a little olive oil over top and cover with foil
Bake lamb at 350 degrees Fahrenheit for 45 mins
Remove from oven, brush the sauce mixture evenly over all pieces and place back into the oven un-covered, until the lamb is cooked
It was quite good. First time I ever made lamb like this, I will be doing it again this weekend for my parents and sisters, except with lamb chops on a grill… but on the weekend… at my mom’s house … so it doesn’t count as a repeat! ![]()
