Trini Fried Bake or Jamaican Johnny Cakes

Really yummy and easy to make Caribbean styled fried roti.
One of my most favorite Trini foods is what we call fried bake, you can see the authentic way of making and serving it at the Trini Gourmet blog.
However since I would never to all of that on my own, I use Grace Johnny Cakes to make my bakes, and it’s just a matter of adding milk to the mixture and then frying in hot oil. One thing that I noticed was that if I go with the directions on the package, it comes out really sticky, and if you have extra flour, that’s perfect, but if you’re like me and don’t stock flour, you can just save a little of the mix to use as a flour substitute and add a little less milk.
Try it! Yum!!! 
Ooooooh fried foods… hmm, trying to stay away, alhamdulillah.
But that cake in the background in your last entry looked IRRESISTIBLE!
I demand you send me a slice immediately!!!!

OOOh this reminds me of the song “chickenleg and johny cake” LOL
That recipe in the link looks like a much easier recipe than I use for johny cake so I will definately give it a try.

Hi am interested in the recipe for johnny cakes i went ot Aruba and found them frozen in the grocery store my kid fell in live with them i tried so many times but they do not come out the way these do. Thanks Anne

You have to love the flavors in the caribbean. So different than other parts of the world.
Salt fish with spinach and rice. Don’t forget Dhal with that.Curry chicken with roti. If you like it hot add some pepper sauce.Jerk chicken or pork. Pelau, red beans and rice.Doubles, aloo pie.

* 1/2 cup flour
* 1 cup cornmeal
* 1 to 2 teaspoons sugar
* 1 teaspoon salt
* 1 egg, lightly beaten
* 1 cup hot milk
* 1 tablespoon shortening
Preparation:
Mix the dry ingredients, then stir in the remaining ingredients. Drop or pour on the hot, greased griddle or drop in iron skillet and fry to golden brown on both sides. Serve with butter and syrup as for pancakes, or serve as a bread with butter.
