Three Mushroom Chicken

Day 2, Week 5

Actually, there are only 2 types of mushrooms, but calling it three mushroom chicken just makes it sound tastier! Am I right?

Ingredients:
whole chicken (cut in half)
white mushrooms
Portobello mushrooms
(you can add a third)
garlic plus
green onions
green seasoning

Guidelines:

Season the chicken with trini-style green seasoning, onions, green onions, garlic plus, salt and pepper to taste
Place chicken into a glass, baking dish, and spread the mushrooms over the all the chicken
Drizzle olive oil over top and cover with foil
Bake in pre-heated oven at 350 degrees Fahrenheit for 30 mins
Remove from oven, remove foil, turn over the chicken halves, drizzle soy sauce over it, put back into the oven until chicken is cooked

We served with steamed broccoli and carrots, baby spinach and cheddar-stuffed sweet potatoes. Kids did not enjoy the sweet potato, but I think it is because they are not fond of the texture… try serving with corn and steamed veggies for the kids.

Mmmm… that sounds yummy! 

My girls aren’t crazy about sweet potatoes either – until I made them into home-style fries and baked them in the oven!  Toss them in some olive oil, and sprinkle with salt (to taste) and paprika!  They come out crispy, sweet and delicious!

oh Kai, thanks!! that’s such a great idea… my sister makes sweet potato fries on the stovetop, but I am so afraid of hot oil, so I am definitely going to try baking them! you’ll see it up here soon wink thanks!
