Salmon in Mayo

Day 4, Week 1

Ingredients:
Salmon fillets
mayo
garlic
paprika
lemon
thyme
Guidelines:
Place washed Salmon fillets into baking dish, and rub with the lemon juice
Evenly distribute the garlic, paprika, thyme on the fillets
Add salt and pepper to taste
Use about 1tbsp of mayo per fillet and paste on the fish until it is completely covered
Drizzle a little olive oil on the top, and broil at 350 degrees Fahrenheit for 15 mins
Then flip the fillets and again broil for about 15 mins, or until fish is cooked
We served this with saut�d veggies and roasted potatoes.
The kids love fish, but are not big fans of potatoes, so I served it to them with some steamed veggies and bread.
I LOVED this fish! 
How do you find the time and motivation to make such great meals for your family with 3 little boys?

Actually, the meals are so easy! super easy stuff, I start preparations about 5:30 usually… when my husband is with the kids, and we eat at about 7ish…
It’s really not a huge effort on my part, I don’t like to stress over cooking, so what I would normally do is check what I have and then just throw something together… it really helps that my husband is not fussy!!

Okay now I know what my problem is, my husband gets home after the kids are in bed. I usually have 2 running around being crazy and a baby crying because he wants to be held. I’ve tried altering when I cook but it doesn’t help. They just won’t behave and calm down when I am in the kitchen.

ahhhh, yes, that is not ideal. but what you could try is this… when you need to be in the kitchen, you can have the do some colouring or something that they need to sit down to do.
If I must do something and my hubby is not around, I will make sure they have an activity. Try to build it into their routine. Like have playdoh or something that they may do on the kitchen table, so you know where they are.
And the baby… well that is kinda hard, I just put the baby in his high chair and give him baby biscuits and it usually keeps him entertained.

at one stage of their childhood, i used to put a nasheed tape for them and they would run around – but that meant i could only be in the kitchen for 1/2 hour. So quick dinners only. Now they are old enough to occupy themselves so i don’t have that problem.
