If you’re in Toronto, maybe you’ve seen the Hellmann’s mayo commercial with a fan recipe video for “helmania chicken” (I couldn’t find it on the net), but this is loosely based on that!
Put whole chicken into a dark-colored baking dish
Add on top the garlic, soy sauce, salt and pepper to taste
Sprinkle generously with jerk seasoning
Add about 2 tbsp of mayo and 1tbsp of butter and mix everything together, rubbing it into the chicken (I used my hands)
Cover with foil and bake at 350 for about 1hr or until fully cooked and tender
Served with linguini in a spinach and cheese sauce and veggies.
I like the variation on jerk chicken. I imagine that the mayo cools the jerk down a bit and makes it much more palatable for those who don’t like spicy food!
I love shaz’s page for several reasons:
(1) the ingredients are usually already in my cupboard, pantry or frige and I rarely have to schlep out to find something;
(2) the dishes are quick to prepare and whip up, especially for a busy working mom who doesn’t have time to plan and prepare elaborate meals;
(3) the selections are super tasty, and my versions usually come out not looking as nice, but tasting quite delicious. too often I come to the site looking for a quick recipe to prep for the family and I come hungry, so I sometimes go overboard, but it’s usually worth it and the family and visiting in-laws have raved about my meals! yayay! points with the mother-in-law are always good. :D
(4) the menu items are usually a twist on the garden variety type stuff making them edible to the little picky ones and the older “eat anything” variety of my home restaurant patrons.
