Indian Chicken

Week 8, Day 3

My eldest son and I love Indian food, while ironically, my real Indian husband does not! Weird, I know.

So one day, I convinced my son to request that his dad get Indian food for us for dinner, come on… the kid will surely have better luck than me! We got Tandori chicken and my son loved it so much that he always asks for “Indian Chicken”! I wanted to cook it for him, but I didn’t have the Tandori seasoning, so I used regular Patak’s Madras Curry and yogurt, which we now call “Indian Chicken”.

Ingredients:
Patak’s Madras Curry Paste

chicken leg & thighs
yogurt

Guidelines:

Add about 2 tbsp of curry paste to 10 chicken pieces
Add in 1/4 cup of yogurt, and mix well
Bake at 350 degrees Fahrenheit in a glass baking dish until cooked

We served it with rice and steamed broccoli, it was quite yummy and one of the easiest ways to cook!

mokey, well yogurt in curry chicken is obviously not a Trini thing, I was kind of surprized at first too, but it is extremely common and normal for East Indian foods.
