Homestyle chow mien & bell pepper shrimp

Day 1, Week 5

When we were growing up, my mom would cook chow mien like this for us… I can’t really tell you what the influence was… Chinese I imagine, but somehow she just made it her own special thing. She does not really cook it anymore, and it has been a long while since I have eaten it, but it still is YUM to me! Makes me feel like a teenager again! smile

Ingredients:

whole wheat spaghetti
carrots
cabbage
celery
broccoli
green bell peppers
onion
garlic

Guidelines:

Cut up the cabbage, green peppers and carrots in a thin, long strips (julienne)
Add the crushed garlic and chopped onions to a little pre-heated oil in a wok on medium heat
Add in the carrots and cabbage and mix well, let it cook for a few mins
Then add in the broccoli, bell peppers and celery, cook veggies until they are at your desired tenderness
Add salt and pepper to taste
Add in cooked spaghetti and mix everything well and serve

We served ours with shrimp, cooked in a red bell pepper sauce, and corn.
