Fake Indian Curry Beef

Day 3, Week 1

You know that I am a fake Indian and as such I make fake Indian food! smile

Actually, I thought this was goat (we got it for Eid-ul-adha ), but by the time I was ready to cook it, I realized it was beef, and although I had never cooked beef in this particular way, or have not even eaten beef like this before either, I thought… nothing’s gonna stop me now!

Ingredients:
Beef
Patak’s Madras Curry

green onions
garlic
tomatoes
zucchini
onions

Guidelines:

Pre-heat a small amount of oil on medium-high heat, in a saucepan, then add chopped green onions, onions and garlic, let it cook for about 1 min
Add in the curry paste (follow the directions on the bottle for the amount of curry needed), cook for about 2 mins more

Add in the chopped tomatoes and zucchini, and mix well, let that cook for about 5 mins
Add in the beef, mix well, turn down the heat to medium
The beef should cook in about 1.5 to 2 hours, add water as needed for the beef to cook

The kids were not too fond of it, so for them, I added corn and butter to the rice, and served with carrots… still healthy! smile

Served with rice and your favourite salad.

Tri-colour pasta and veggies

Day 2, Week 1

This is one of those super-easy dishes that I make when I am not really in a cooking mood, or on those days when I completely forget about dinner!

Main ingredients:
tri-colour Fusilli (the whole wheat variety works great too)
mushrooms
bell peppers
green onions
celery

chicken breast (cooked and chopped)
garlic powder
herbs (your choice, to taste)

Guidelines:

Preheat a pot with a little olive oil on the stovetop, then add chopped mushrooms and green onions
Once the mushrooms are cooked, add in the diced peppers and celery, and let that cook for about 2 mins
Add in the chicken breast (or in my case, de-boned, leftover chicken from yesterday)
Then add in the al dente Fusilli and mix well, you may need some more olive oil

Add the herbs, garlic powder, salt and pepper to taste, and mix well
Let it cook for about 5 more mins on medium heat and you’re done!

For the kiddy version, I used chopped carrots, broccoli and melted cheese, since they are not big fans of mushrooms and peppers, but I don’t mind because I usually make a version of almost all my dishes that is more palatable and healthier for kids.

Serve with garlic bread and fresh baby spinach.

Un-authentic Jerk Chicken

Day 1, Week 1

Jerk Chicken is a traditional Jamaican dish… now I have to say that although the first 18 years of my life was spent living in in the Caribbean, I only heard about Jerk after I moved to Canada!!

Oh, also, I have never eaten authentic Jerk Chicken. smile

Main Ingredients:
1 whole chicken, cut into small pieces
Gouda Jerk Spice
Trinidadian Curry Powder

Guidelines (quick, easy, but still tasty!):

Pre-heat pot on stovetop, add a little oil, and then put in the washed chicken parts
Cover the chicken in a generous sprinkling of Jerk seasonings, and then evenly sprinkle about 1tbsp of curry powder

Add a drizzle of olive oil on the top and mix it all up for about 3-5 mins on high heat while the chicken gets brown
Add salt and pepper to taste
Once the chicken is evenly covered with the spices and the liquid from the pot is almost gone, add about 4oz (I use a sippy cup to measure) of water and let it cook for about 20 mins on medium heat
Add about 4oz of water again, mix well, let cook for about 20-30 mins more until chicken is ready

Grown-up version was served with rice, beans and salad, kiddy version was served with rice and an avocado-veggie medley.

A different meal everyday…

...well, every ‘week’ day at least, and for about a year, I think. (not cooking on Friday, Saturday, Sunday)

Often I would bring a meal to the dinner table that my family has neither heard about nor seen before, and ummm, that has perhaps never been experienced by anyone for that matter!

You know, I am a little cooking-challenged, well, actually, what I am is disorganized and I am almost in shock everyday when I realize it’s time to make dinner and I have not made any preparations… there must be some other moms like me out there?

So… my point… for 1 year I am going to attempt to make a different meal every day, except weekends because my husband apparently feels like he will need a break from my “experiment” every so often.

It starts next week!! And I will be posting recipes, photos, and reviews (hubby and kids) of our dinner the day after… so look out! And everyone is welcome to join in, send me ideas, and let me know what you think.

I do have some rules that I generally try to follow when cooking… as a mother of 3 and all… it has to have a prep time of 1 hour or less, and a cook time of 2 hours of less, has to be EASY, no muss no fuss kind of thing, and has to use normal-ish ingredients. This is cooking – ‘mom, non-gourmet’ style!

Disclaimer: Not everything I cook will be my own invention, and I will give a little history about the dish if it’s something ethnic.
