Lamb chops

Day 4, Week 4

So… it’s not a whole leg of lamb on the plate, but it did come from a leg of lamb smile

Ingredients:

lamb chops
Montreal steak spice
garlic
rosemary
paprika
honey
mustard
olive oil

Guidelines:

This is so simple to make…
generously sprinkle the steak spice and paprika over the meat
add a little rosemary, crushed garlic, mustard, salt and pepper to taste
drizzle some honey and olive oil over top, and mix everything really well
Put into a glass baking dish covered with foil and into the oven at 350 degrees Fahrenheit for about 2 hours or cook until desired tenderness

We served this with rice for the kids.
Grownup version was served with scalloped potatoes, and saut�ed mushrooms, red peppers and onions.

Wannabi Chinese noodles

Day 2, Week 4

UPDATE: I lied! It was Bok Choi/Pak Choi that I used, and not leek! :( sorry… I so totally thought it was leek!

Remember the yummy chick? Well, we had some leftover, so what I did was tear the meat into smaller pieces, added some noodles, and called it Chinese food!

Ingredients:
Boneless Chicken pieces (leftovers work great)
Noodles
Hoisin sauce

Sesame oil
Soy sauce
garlic
Bok Choi/Pak Choi

Guidelines:

In a medium sized saucepan, heat up a little olive oil and add in crushed garlic
Saut� the chopped bok choi, and add in the chicken

Add the Hoisin sauce (I think just a few dashes will do)
Add a few drops of sesame oil
Add in the noodles
Add enough water for the noodles to cook, and then drizzle soy sauce over it and mix well
Add salt and pepper to taste
Remove once the noodles are cooked

I think it would be great with broccoli, but I did not have any. It tasted surprisingly Chinese… especially since I have never used Hoisin sauce in my life before! smile

Day 1, Week 4

So… this, my friends, is the best chicken ever! Like, ever! If you try just one of these dishes, try this one!

Ingredients:

Botanica Chicago Chicken seasoning (I cannot find it on the net, I got it from Costco) It is a new company in Montreal, Canada.
Actually… now I am sad, because I cannot find it on the net, and that is what made the chicken so good!! I did find this which may work…

ok, back to the other ingredients
garlic plus
lemon pepper seasoning
paprika
soy sauce
1 whole chicken, cut in half

Guidelines:
Place the 2 halves of chicken into a glass, baking dish

Season generously with the Chicago Chicken seasoning and paprika
Sprinkle the lemon pepper seasoning over the chicken
Add the soy sauce (to taste… it is salty), and drizzle olive oil over everything, and cover with foil
Put in a pre-heated oven at 350 degrees Fahrenheit, for half hour
After half hour, take it out of the oven, turn over the chicken, sprinkle garlic plus over, drizzle some of the chicken juices over top, and put it back into the oven, without the foil, for another half hour or until cooked

Served with rice and beans.

Spaghetti and meat sauce

Day 2, Week 3

This is maybe the most ‘normal-ish’ meal you may ever see me prepare! My husband really loves it, and so do I, it’s pretty healthy, tasty, contains lots of veggies, and nutritious tomato sauce… what could be better?!

Now, I categorized it as ‘normal’ because to me, it’s a pretty normal, North American meal, but is it ethnically Italian? Here is an article about meat for those interested!

Ingredients:
1 lb ground lean beef
1 can tomato paste
green onions (chopped)
Portobello mushrooms (cut into chunky pieces)
red bell peppers (chopped)
baby spinach (chopped)
soy sauce

1 tsp honey
lemon pepper seasoning
paprika
garlic
onion
oregano

Guidelines:

In a large saucepan, thoroughly cook the ground beef

Then add the mushrooms and green onions, garlic and onion and mix well
Once the mushrooms are cooked, add in the red peppers, a dash of paprika, and a generous dash of lemon pepper seasoning
Also add in soy sauce… you can average the amount need… just a few dashes will do, covering the meat evenly
Add one can of pure tomato sauce and 2 cans of water (follow directions on the can)
Add in the honey
Add salt and pepper to taste
Add a very generous sprinkle of oregano

Add in the baby spinach and mix well
Let it cook for a few minutes, until the sauce is boiling, then it’s done!
Easy, peasy! smile

I served the grown up version with whole-wheat Spaghetti and baby spinach, I also LOVE mine with avocado slices (yes, I can eat avocado with anything).

I served the almost 3 year old (who does not enjoy the strong flavour of the meat sauce yet) his spaghetti cooked with egg and chopped spinach. I served the 4 year old meat sauce in hard taco shells (he asked for it, I had it, no need to fight him on this request!)

Trini-style chicken & provision soup

Day 1, Week 3

I grew up eating soup like this, and referring to the ‘vegetables’ as provision. In fact… I never knew about any other type of soup until I was a teen!

Ingredients:

1 chicken (cut into small pieces)
2 potatoes
4 sweet potatoes
2 cassavas (yucca)
2 green figs
2 plantains
� cup dahl
3 stalks of celery

green onions
3 carrots (cut into slices)
1 onion (chopped)
garlic (crushed)
hot pepper
� head of cauliflower
6-8 okra
goldenray butter

Guidelines:

The first thing you need to do is semi-cook the chicken…
Season the chicken with onions, garlic, pepper and salt
In a medium size saucepan, caramelize about 2 tbsp of sugar
Add the chicken pieces, remove from heat once they are about half-way cooked

Caramelize � cup sugar in a large pot, add carrots, celery, dahl, chives and then all the other veggies (cut up into bite-size pieces), except okra
Cook a little, and then add the semi-cooked chicken

Add the okra
Add water until all veggies are covered
Boil on medium heat until the veggies are tender
Once the soup is about done, chicken is cooked, and the veggies are tender, add the goldenray butter
Add salt and pepper to taste

You can substitute the chicken for any kind of meat… we LOVE it with beef, and maybe ox-tail smile – recipe courtesy of my mom, and her mom…
