Day 4, Week 10


In my opinion, this was the best-est fish I ever had! Of course, when I expressed this to my husband and inquired about his feelings towards the fish, he said… and I quote, “it tastes like fish”!
Ingredients:
4 salmon steaks
1 oz orange juice
1 tbsp of honey
2 tbsp soy sauce
2 oz ketchup
oregano
lemon pepper seasoning
Guidelines:
Season the fish with lemon pepper seasoning, oregano, salt and pepper to taste
In a mixing bowl, combine the ketchup, honey, orange juice and soy sauce
In a large saucepan on medium heat, add a little olive oil and once heated add in the fish steaks
Make sure the fish is cooked evenly on both sides, and once is
starting to ‘brown’, brush with the sauce
Once fish is cooked, remove from heat
I served it with beans and rice. The kids ate every bit of it… except they had butter instead of beans, but the totally love salmon!

Day 3, Week 10

Again, thanks to my sister for this really delicious dish!
Ingredients:
ground chicken (or your choice of meat)
eggs
bread crumbs
herbs
cheese
pasta sauce
Guidelines:
Add your choice of fresh, chopped herbs to the chicken, and add salt and pepper to taste
Add in 1 egg per 1lb of meat and mix well
Roll into bite sized balls and lightly coat with the bread crumbs and deep fry them

Once the balls are ready, heat up bottled pasta sauce (or if you’re using homemade sauce, once it’s almost finished), add in some shredded cheese, and the chicken balls
Serve with spaghetti and garnish with fresh herbs and grated cheese. The kids really loved the mini chicken balls!

Day 2, Week 10

For those kind of days where I really don’t feel like cooking…
I’m Trinidadian, East Indian, and I am convinced that there is some Chinese in the mix as well, so it’s not surprising that I can eat a plate full of rice for dinner… and really enjoy it! Obviously, rice is usually my side dish, but when there is leftover rice and no urge to cook… this is an excellent dish, and loved by kids!!
Ingredients:
cooked rice
green peppers
green onions
chopped baby spinach
eggs
Guidelines:
In a saucepan on medium heat, add some butter
Once it is melting, add in the green onions and green peppers
Add in the rice and mix well
Then add in the eggs and keep mixing until the eggs are cooked
Add salt to taste
Finally add in the spinach, cook for about a minute and remove from the heat, serve and enjoy!
I don’t add any additional seasonings because I love the pure and subtle flavour of this dish, and my kids also love it.

Day 1, Week 10

So… this is another first for me! It was good… and really fast.
Stir Fry is a fast-cooking Chinese technique.
This is a good vegetarian meal, if you don’t put the beef of course.
Ingredients:
Beef strips
mushrooms
radishes
bean sprouts
bok choi
VH teriyaki stir fry sauce
soy sauce
chilli pepper
oyster sauce
Guidelines:
In a wok on medium heat, add in the beef strips with a little olive oil
When half cooked, add in the mushrooms and the bean sprouts
Add in chili pepper, soy sauce, oyster sauce and teriyaki sauce to taste, and mix well
Once the mushrooms are cooked, add the radishes and bok choi, saut� for a few minutes and remove from heat
Serve with Jasmine rice.

Week 8, Day 4

Also called Easy Tacos! All you need is some minced beef or chicken, and a yummy assortment of veggies… I bet your kids would love it!
Ingredients:
Old el Paso Taco Kit
green onions
frozen spinach
chopped broccoli
carrots
cubed avocados
sliced or grated cheese
sour cream
chopped red peppers
Guidelines:
Prepare the meat and tacos according to the directions on the packaging
When the meat is cooked, add in frozen spinach and let cook until the spinach melts
I like to put the veggies into little bowls and get the kids to put them on the table (they really love that)
Let everyone make their own tacos!!
Choose veggies that your kids would like, it’s a great, fun and easy dinner!
