Day 2, Week 5

Ummm, my desi friends, I am sorry about this.
Everyone else, Biryani… the EASY way!
Ingredients:
Shan Sindhi Biryani Mix
3/4 way cooked basmati rice
peeled shrimp
onions
garlic
tomatoes
plain yogurt
cilantro (if you don’t hate it)
Guidelines:
In a medium sized pot, on medium heat, add in crushed garlic and chopped onions into a little oil and saut for a few mins
Add in the Shan biryani mix and a little water, let cook for about 5 mins, add more water as needed so that the mixture does not burn
Add in the shirmp, then once the shrimp turns pink, add in the chopped tomatoes and cook for another few mins
Finally, add in the cooked rice and water if required, mix well, and cook until the rice is tender
Once it ready, you can add in yogurt, to taste
Note: The seasoning in the box already has enough salt and pepper, and we actually added pepper and it was TOO hot for some of us (husband and kids), so I added more rice and yogurt and they loved it!
The box would have directions on how much rice to make, but I just averaged it.
I thought it was YUMMY!! Very close to the real thing… to me at least

Day 1, Week 5

When we were growing up, my mom would cook chow mien like this for us… I can’t really tell you what the influence was… Chinese I imagine, but somehow she just made it her own special thing. She does not really cook it anymore, and it has been a long while since I have eaten it, but it still is YUM to me! Makes me feel like a teenager again!
Ingredients:
whole wheat spaghetti
carrots
cabbage
celery
broccoli
green bell peppers
onion
garlic
Guidelines:
Cut up the cabbage, green peppers and carrots in a thin, long strips (julienne)
Add the crushed garlic and chopped onions to a little pre-heated oil in a wok on medium heat
Add in the carrots and cabbage and mix well, let it cook for a few mins
Then add in the broccoli, bell peppers and celery, cook veggies until they are at your desired tenderness
Add salt and pepper to taste
Add in cooked spaghetti and mix everything well and serve
We served ours with shrimp, cooked in a red bell pepper sauce, and corn.

Day 6, Week 2

Because it’s finally snowing in Toronto, I thought I would make spicy shrimp with snow peas!
Usually I make shrimp with bowtie pasta, but since I got this 5lb bag of Fusilli from Costco, I felt compelled to use it…
Ingredients:
Fusilli or Bowtie pasta
shrimp
snow peas
green onions
Portobello mushrooms
curry powder
garlic plus
paprika
crushed red chillies
Guidelines:
First, marinate the shrimp… I use about 30 medium sized shrimp, with 1 tbsp of curry powder, a generous sprinkling of paprika, salt and pepper (crushed red chillies) to taste, garlic plus, and olive oil, mix well and leave in the fridge just until we need it later on
Cook the pasta until it is al dente
In a saucepan, saut the mushrooms until they are cooked
Add in the chopped green onions and snow peas
Then add in the shrimp and mix well, you may need some extra salt or garlic plus
Add in the pasta and mix everything well
I served with fresh baby spinach and avocado slices.
Kiddy Version

For the kiddy version, I cut up the shrimp into kid-bite-size pieces, added canned corn, spinach and cheese. Kids LOVED it!
