I love lamb, I must have mentioned that previously, and as a result, will try almost any lamb recipe… I saw one for Lamb shanks in spicy tomato sauce, which of course I just had to try, albeit modified from this version (her photo is sooo much more appetizing!).

Ingredients:
Lamb pieces (I used small chops, because I feel like they cook faster and taste pretty good)
canned tomato sauce
tomatoes
garlic
onion
honey
rosemary
thyme
peppers
olive oil
peppers (I used cherry peppers)
Guidelines:
Add the herbs, chopped onions, and crushed garlic to the lamb, add a little olive oil and rub into the meat
Add in a little honey, the tomato sauce, chopped tomatoes, chopped peppers and salt (according to your taste) and mix well
In a covered, glass baking dish, bake at 350 degrees Fahrenheit for about an hour, then uncover the dish, and cook for another few mins until the lamb is fully cooked, or to your liking
I served with rice and salad. You could also add a little curry to it (which I tend to add to many dishes, but I didn’t add it to this one), instead I added a little honey, which, together with the pepper and salt tends to counteract the “tomato-ish” taste.

Day 3, Week 11

It’s been one of those weeks, where I just don’t feel in a particularly ‘domestic’ mood, and as such I am making dishes that take less than 15 minutes preparation time! This dish was unexpeditly tasty, albeit kinda weird!
Ingredients:
1 can condensed cream of mushroom soup
lamb pieces
paprika
herbs
Guidelines:
Season the lamb with paprika, your choice of herbs, salt and pepper to taste
Add in the cream of mushroom soup and mix well
Bake at 350 degrees Fahrenheit in a glass baking dish, covered with foil, for about 1 1/2 hrs or until fully cooked
I served with rice and carrots.

Week 8. Day 2

With the leftover lamb that I had from the previous meal, I decided to just slice it up and add it to some noodles!
Ingredients:
Lamb strips (leftovers work great)
Noodles
Hoisin sauce
Sesame oil
Soy sauce
garlic
broccoli
Guidelines:
In a medium sized saucepan, heat up a little olive oil and add in crushed garlic
Saut� the chopped broccoli, and add in the lamb strips
Add the Hoisin sauce
Add a few drops of sesame oil
Add in the noodles
Add enough water for the noodles to cook, and then drizzle soy sauce over it and mix well
Add salt and pepper to taste
Remove once the noodles are cooked
I know, I know… I am kind of cheating, but you know how it is the week after you’re back from vacation!

Week 8, Day 1

My blog buddy Kai suggested that home-style fries made with sweet potatoes are yummy, so I decided to give it a try!
It was really yummy, my husband loved it, but the kids still didn’t :( I will make it again though! thanks Kai!
Indian Fried Lamb
Ingredients:
Shan Fry Lamb seasoning (which I cannot find, please email me if anyone knows where I can find it online)
Lamb steaks
Guidelines:
This is so totally simple, I just marinated the lamb steaks with the seasoning and a little olive oil
Since I hate to fry stuff, I just baked the lamb in a dark colored baking dish until cooked

Day 3, Week 5

Since it was sooo cold and snowy yesterday (read: depressing-ish), I decided to cook some comfort food.
Ingredients:
lamb pieces
hoisin sauce
bbq sauce
soy sauce
sesame oil
Montr�al steak spice
onions
garlic
red bell peppers
mushrooms
sweet onions
couscous
Guidelines:
Roasted Veggies & Couscous –
Cut red peppers, mushrooms and the sweet onions into chunky pieces
Put all into a roasting pan and drizzle olive oil over
Bake at 350 degrees Fahrenheit until the veggies are to your desired tenderness and colour
Once it is finished, cut up the veggies into bite sized pieces and put them into a medium saucepan, add couscous and enough water to completely cook the couscous (direction on the packaging)
Once the couscous is cooked, it’s done!
Lamb – (inspired by this)
Put lamb pieces into a glass baking dish
In a bowl, mix chopped onions, crushed garlic, hoisin sauce, soy sauce, a few drops of sesame oil, and the bbq sauce
Season the lamb with the Montr�al steak spice, salt and pepper to taste, drizzle a little olive oil over top and cover with foil
Bake lamb at 350 degrees Fahrenheit for 45 mins
Remove from oven, brush the sauce mixture evenly over all pieces and place back into the oven un-covered, until the lamb is cooked
It was quite good. First time I ever made lamb like this, I will be doing it again this weekend for my parents and sisters, except with lamb chops on a grill… but on the weekend… at my mom’s house … so it doesn’t count as a repeat!
