This is actually my mother in law’s specialty! She prepares them and freezes them, so all I have to do is thaw and fry… or lightly cover with oil and bake/broil. Kids absolutely adore these!
To be honest, I don’t know how she makes it, and I doubt I will ever attempt it, because I am sure that it won’t be as delicious! However… I will try these lovely samosas... like a work of art, right?

Day 2, Week 12

Well… I was running low on imagination :(
Very, very simple pasta dish.
Guidelines:
Cook ground meat with a little garlic powder, add in the cooked pasta and mix! Salt and pepper to taste.

Day 4, Week 11

Unlike the shake n’ bake fish, the chicken version is quite delicious! And this time my sister was here so she showed me the error of my ways… apparently only 1 piece of chicken goes into the bag at a time! Yes, my friends, the looser that I am, I put all of the meat into the bag at once and wondered what was ‘great’ about this!
Ingredients:
chicken wings
Shake n’ Bake
chicago chicken seasoning
herbs
Guidelines:
Season chicken wings with the chicago chicken seasoning and your choice of herbs
Follow the directions on the Shake n’ Bake package… very simple, fill the bag with the mixture, then place one wing at a time in the bag and shake!
Then bake until the wings are fully cooked
Served with fries and biscuits

Day 1, Week 11

I mentioned before that I don’t eat processed foods, well frequently anyways… So I don’t really like the idea of giving the kids hotdogs, although I do give it to them on occasion. I needed to find a substitute and came up with easy kebabs! The 4 year old LOVED it!
Ingredients:
ground chicken (or other meat)
lemon pepper seasoning
paprika
chopped spinach
cilantro
bread crumbs
1 egg

Guidelines:
In a mixing bowl, combine the meat with an egg and the bread crumbs (1 cup of crumbs to 1 lb of meat)
Add in the chopped spinach and cilantro, mix well
Add in the paprika, lemon pepper seasoning, salt and pepper to taste
Roll the mixture into hotdog-like shapes
In a saucepan on medium heat, add some oil and once hot, cook the kebabs until golden-brown
Remove kebabs and bake in the oven at 350 degrees Fahrenheit for about 30 minutes or until the meat is completely cooked
Add to hotdog buns and serve with steamed veggies

Day 3, Week 10

Again, thanks to my sister for this really delicious dish!
Ingredients:
ground chicken (or your choice of meat)
eggs
bread crumbs
herbs
cheese
pasta sauce
Guidelines:
Add your choice of fresh, chopped herbs to the chicken, and add salt and pepper to taste
Add in 1 egg per 1lb of meat and mix well
Roll into bite sized balls and lightly coat with the bread crumbs and deep fry them

Once the balls are ready, heat up bottled pasta sauce (or if you’re using homemade sauce, once it’s almost finished), add in some shredded cheese, and the chicken balls
Serve with spaghetti and garnish with fresh herbs and grated cheese. The kids really loved the mini chicken balls!
